Ingredients:

  • Greek Yoghurt

  • Self Raising Flour

Steps:

  1. In a bowl mix 1:3 ratio Greek yoghurt to self raising flour.

  2. The mixture should be combined in clumps, with some flour left over in the bowl

  3. Transfer dough to a clean bench that has been lightly dusted with flour and knead the dough with your hands for a few minutes

  4. The dough should all be together in a nice ball shape - you want the dough to be slightly sticky (if the dough is too sticky you can add a teaspoon of flour and continue kneading until you get the desired consistency.

  5. Once at the desired consistency, place the ball of dough back in the bowl to prove. Cover the bowl with a tea towel for 20-30 mins. (the longer the better)

  6. After the dough has had time to prove, remove and give a quick knead.

  7. Heat up a frying pan with some spray oil or drizzle of oil (you want this to be HOT!)

  8. Lightly dust the bench top with flour, and cut the dough ball into desired size pieces. (we worked on 8-10 pieces)

  9. Roll each piece into a ball - and place back in the bowl covered with the tea towel (so it does not dry out)

  10. Take 1 ball at a time, and flatten with a rolling pin. You want to get the pita bread nice and thin so it puffs whilst cooking in the pan.

  11. Lightly spray the frying pan with spray oil (or drizzle oil) and place pita in the centre of the pan.

  12. Pita should begin to puff up or create little air pockets. Take a peak at the side facing down, once browned give the pita a flip!

  13. Continue the same steps as above to make the rest of the pita's.

This recipe is versatile and can be used for Pita's, Pizza bases and even transformed into a sweet dessert!! - post on that to come soon!
